Ingredients:
2 tablespoons of olive oil
½ pound of Chopped Boneless Pork Leg in medium cubes
1 Teaspoon of cinnamon
1 Teaspoon of turmeric
1 Teaspoon of garlic powder
1 Teaspoon of ginger powder
1 Teaspoon of cumin
1/3 Cup of chopped dates
3 Pitted and sliced Medjool Dates
1 Peeled sliced carrot
1 Small peeled sweet potato, cut into small cubes
¼ Cup of green olives halved
1 Lemon
Zest of 1 lemon
2 Tablespoons of honey
1 Cup of cooked couscous
Cilantro leaves
Directions:
➡️In a bowl combine the pork meat with cinnamon, turmeric, garlic powder, ginger powder, and cumin.
➡️In a large saucepan on medium heat, drizzle the olive oil, let it warm add the meat and sear. When it has turned a nice golden brown, add the honey. Stir every minute for 5 – 7 seven minutes.
➡️Add the juice of half a lemon, chopped dates, carrot slices, and sweet potato cubes, stir and cover with a lid for about 3-4 minutes.
➡️Remove the lid, stir and add the lemon zest, olives, and sliced dates. Serve in a bowl with couscous and cilantro leaves.
